Baked Sweet Potato with Beans

Ingredients (for 1 portion)

  • 1 organic sweet potato

  • 1 tsp coconut oil

  • 1/2 cup black beans

  • 1/2 cup cherry tomatoes

  • 50 ml filtered water

  • 30 g cashews

  • 2 tbsp nutritional yeast

  • 1 clove garlic

  • 1 tbsp lemon juice

  • 1/2 tsp sea salt

  • 1/2 tsp black pepper

Preparation

  1. Set the oven to 350°F (180°C).

  2. Soak the cashes in warm water for 15 minutes

  3. Wash the sweet potato, cut it in half and rub it with coconut oil.

  4. Put it upside down on a baking tray and bake for about 30-35 minutes.

  5. In a pot cook the back beans together with the cherry tomatoes and 1/2 crushed garlic for about 10 minutes, stirring occasionally.

  6. Strain the cashew and add them to a high speed blender together with the filtered water, nutritional yeast, 1/2 crushed garlic, lemon juice, salt and pepper and blend until creamy.

  7. When the potatoes are ready scoop them in the middle and the beans mixture and cashew cream

  8. Sprinkle some nutritional yeast and enjoy!
