Green Power Kale Salad with Sorina Fredholm

Ingredients (1 portion)

  • 2 cups kale

  • 1/2 cup sprouts

  • 1/2 cup red cabbage

  • 1 cup broccoli

  • 1/3 cup chickpeas

  • 1/4 cup tofu

  • 1/4 cup mango

  • 2 tbsp lemon juice

  • 1 tbsp olive oil

  • 1/4 tsp chili flakes

  • 1/2 tsp sesame seeds

Preparation

  1. Wash and cut all veggies.

  2. Drain and rinse the chickpeas and cut the tofu in cubes. Stir fry them slightly in a drop-off oil and tamari.

  3. Strip the kale and massage the leaves with a bit of olive oil, 1 tbsp lemon juice and sea salt, until they become soft and juicy.

  4. Mash the mango and add in the chili flakes, 1tbsp of lemon and mix well.

  5. Arrange all ingredients on a plate, sprinkle sesame seeds and the dressing.

  6. Enjoy!
