Marinated Mushroom Burger with Sorina Fredholm

Ingredients (1 portion)
Marinated Mushrooms:
4 portobello mushrooms
1 tablespoon extra virgin olive oil
2 tablespoon tamari
2 tbsp lemon juice
Burgers:
1/2 cup black beans
2 tbsp walnuts
2 tbsp oats
1 tsp tomatoes paste
1/2 tsp smoked paprika
1/2 tsp Salt
1/2 tsp pepper
Cashew sauce:
1/2 cup cashews
1/4 cup water
1 tbsp nutritional yeast
1 tbsp lemon juice
1 garlic clove
Toppings:
2 leaves lettuce
1/4 red onion
1/2 avocado
Preparation
Set the oven to 350 Fahrenheit.
Soak the cashews in warm water for minimum 15 minutes.
Mix olive oil, tamari and lemon juice and marinate the mushrooms in this mix for about 10 minutes. Transfer the mushrooms to a lined baking sheet and bake for 10 minutes.
In the meantime, add to a food processor the beans, oats, walnuts, tomato paste, smoked paprika, salt & pepper and pulse few time, until everything is mixed. Transfer the mixture in a large bowl and roll the patties. Refrigerate for 5 minutes.
To make the cashew sauce, blend all the sauce ingredients, until smooth and creamy.
Add the patties to the oven next to the mushrooms and bake for another 20 minutes, turning them at half time.
Clean and cut topping ingredients.
Assemble the burgers by adding the patties on top of the marinated mushrooms, together with the rest of the toppings and cashew sauce.
