How to Bake Power Packed Bread

Baking power packed bread became a project for many people during quarantine - whether it was creating your own sourdough starter or simply dusting off some old baking skills you had forgotten you had! Our CEO, Mikael Fredholm, who you won’t find in the kitchen too often has whipped up this power packed bread recipe as he has been longing for a taste of Swedish bread! After a bit of research, trial, and error, Mikael believes he has found the perfect mixture for a great recipe for healthy, nutritious, tasty nuts and seeds bread.

Not only is this bread gluten-free, but it is also loaded with protein and powerful nutrients! This bread will nourish your body with omega 3s, healthy fats, protein, and no refined sugar!

How to Bake Power-Packed Bread

Recipe:

270 g sunflower seeds
180 g flax seeds
200 g hazelnuts, almonds and walnuts
290 g rolled oats
60 ml chia seeds
120 ml psyllium seed husk
10 ml fine grain sea salt
30 ml maple syrup
90 ml melted coconut oil
700 ml water
2 bags of Four Sigmatic Chaga mushroom elixir (optional for an extra boost of antioxidants and immune supporting properties)

Steps:

  1. Combine dry ingredients in a big bowl.

  2. Whisk maple syrup, oil, and water together and pour it over the dry ingredients. Mix well with your hands.

  3. Prepare two bread pans with baking paper, split the mixture in half, and pour and press it inside the pans.

  4. Let it sit for at least two hours.

  5. Heat up the oven to 175 C, place the loaf pans in the middle, and bake for 20 minutes.

  6. Remove bread from the pan, place it upside down directly on the rack and bake for another 40 min.
